This Irish Ground Beef Stew recipe is a hearty dish filled with flavors of beef, veggies and a bit of beer. Its a great and an easy way to enjoy stew during the week. Serve it over some mashed potatoes for a comforting winning dinner.
In a large dutch oven or soup pot, add the ground beef, olive oil, butter, chopped onion, carrots and celery. Cook over medium heat until beef is cooked and the veggies are soft and tender, about 10-12 minutes.
Add the garlic and cook another minute and until garlic is fragrant.
Stir in the flour, thyme, parsley, rosemary, bay leaf, salt and black pepper. Cook for 1-2 minutes.
Deglaze pot with beer and cook for 2-3 minutes to cook out the alcohol.
Stir in the beef broth, bring stew to a boil. Then reduce heat to low and simmer for 10-15 minutes.
