Classic Chicken Noodle Soup

This homemade Classic Chicken Noodle Soup is an amazing quick and easy recipe that is filled with all the flavors of comfort. Tender chicken, tasty egg noodles, and veggies all bathing in an extra rich broth!

Ingredients

  • 2 tablespoons salted butter
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 3 celery stalks, chopped
  • 4 large carrots, chopped
  • 2 garlic cloves, minced
  • 3 cups chicken, cooked and diced
  • 8 cups chicken broth
  • 2 cups water
  • 12 oz Amish Egg Noodles
  • Salt and Black Pepper, to taste
  • Parsley for garnish, if desired

Instructions

  • In a large dutch oven or soup pot, heat butter and oil over medium heat.
  • Add onion, celery and carrots. Sauté for 3-4 minutes until onions are soft and translucent.
  • Add garlic and sauté another minute until fragrant.
  • Add chicken and mix well.
  • Slowly add chicken broth and water.
  • Heat to a low boil and reduce heat to low.
  • Taste. Add salt and pepper if needed.
  • Stir in noodles and simmer until cooked to al dente.
  • Remove from heat and serve.
