Sausage Sheet Pan Dinner

12 links fully cooked chicken sausages 2 cups broccoli florets 2 cups brussels sprouts , halved 1 cup cauliflower florets 1 cup carrots , cut into 2 inch pieces, or baby carrots 1 small red onion , cut into wedges 3 tablespoons olive oil 1 teaspoon garlic powder 2 teaspoons salt 1 teaspoon black pepper
Preheat the oven to 400°F and line 2 large rimmed baking sheets with parchment paper. Spray or drizzle some olive oil over the parchment.
Slice the sausage links into 1 inch coins and place on the baking sheets.
Add all the cut veggies to a large bowl or zip top bag and add the olive oil, garlic powder, salt and pepper. Toss to evenly coat all the veggies.
Place the veggies in a single layer on the sheet pans.
Bake for 25-30 minutes until crisp and tender. Flip half way if desired.
