Butterscotch Brownies

These Butterscotch Brownies are a simple one bowl recipe that creates chewy, sweet and oh so delicious bars! A great treat that is loaded with butterscotch goodness!

  • Preheat oven to 350° and grease a 9x13 baking dish.
  • In a large microwave safe bowl, or sauce pan, melt 1 cup butterscotch chips with butter.
  • Whisk in the brown sugar and vanilla until smooth.
  • Add the eggs and whisk until fully incorporated.
  • Stir in the flour just until combined.
  • Fold in remaining butterscotch chips.
  • Pour the batter into baking dish and spread out evenly.
  • Bake for 30-35 minutes until the edges are golden brown and just starting to pull away from the sides of the dish and the top of the bars no longer look wet. Insert toothpick in center of bars, if there are few crumbs that no longer look wet the brownies are done.
  • Let brownies cool before slicing and serving.
