Chickpea Peanut Butter Bites are perfect little on the go snacks that are satisfying and delicious! Sweet bites that are made with healthy ingredients makes these a great guilt free snack!
Add chickpeas to food processor and process until they start to make a paste.
Add peanut butter, honey, vanilla, and protein powder. Pulse until the mix is smooth and starts to form a ball, it will be thick.
Place the mix in a bowl and stir in the chocolate chips.
Use a medium cookie scoop or rounded tablespoon to portion bites and then roll into balls. Place balls on a parchment lined sheet pan.
Place sheet pan in fridge to chill for 30 minutes.
Place in air tight container or zip top bag and store in the fridge.
Notes
To freeze: place sheet pan in freezer and freeze bites for a couple hours. Place bites in a freezer safe air tight container or zip top bag. Don't forget to label. To thaw: let thaw about 10-15 minutes before eating or take out the night before and thaw in fridge.
