These tasty Peanut Butter Banana Brownies are rich and decadent with a luscious peanut butter swirl. A great easy-to-make recipe for those over ripe bananas.
Preheat oven to 350° and grease a 8x8 baking dish or line with parchment paper.
In a large mixing bowl, whisk together the bananas, butter and sugar.
Add in egg and vanilla and whisk until well mixed.
Stir in flour and cocoa with a wooden spoon or rubber spatula until well incorporated.
Evenly spread the brownie batter into the prepared baking dish.
Drop the peanut butter by tablespoons on the brownie batter.
Using a butter knife or chop stick, swirl the peanut butter into the brownie batter.
Bake for 25-35 minutes.

If you like a more fudgey and gooey brownie bake around the 25-30 minute mark. If you like a more cake like brownie, bake around the 30-35 minute mark. I bake mine for 32 minutes and they turn out just a touch gooey and perfect!
