Oatmeal Fudge Bars Recipe

This Oatmeal Fudge Bars Recipe is made with a simple oatmeal cookie base and layered with a decadent fudge filling. A delicious sweet treat to share with all your family and friends.

Instructions

  • Preheat oven for 350°F and grease a 9x13 baking dish with nonstick cooking spray or line with parchment paper.
  • In a stand mixer with paddle attachment or with hand mixer, cream together the butter, sugar and brown sugar until light and fluffy.
  • Then, add vanilla extract and eggs one at a time beating well after each egg.
  • Add the dry ingredients: all purpose flourbaking powder, and salt and mix just until combined.
  • Lastly, add the rolled oats 1 cup at a time, mixing slowly after each addition.
  • Add ⅔ of the cookie dough to prepared baking dish and pat it out evenly.
  • In a microwave safe bowl, combine chocolate chips, sweetened condensed milk, 2 tablespoons butter and a pinch of salt. Microwave for 1 minute, stir. If needed microwave an additional 15 seconds until everything is completely melted.
  • Stir in the vanilla extract and immediately spread the fudge filling evenly over the cookie base.
  • Then take pinches of the remaining cookie dough and lay it over the fudge letting some of the fudge peek through.
  • Bake for 30-35 minutes until the cookie dough is golden brown along the edges and no longer looks glossy on top.
  • Let bars cool completely, then slice, serve and enjoy!
