Air Fryer Tuna Stuffed Peppers

Air Fryer Tuna Stuffed Peppers are an easy and quick dinner or lunch option that is healthy and incredibly delicious! A fun twist on a classic tuna melt that is family friendly and perfect for busy weeknights.

  • 2 bell peppers, halved and cored
  • 10 ounces canned tuna in water (two 5oz cans), drained
  • 2 celery stalks, finely chopped
  • ¼ cup plain Greek yogurt
  • ¼ cup Miracle Whip
  • 1 tablespoon spicy brown mustard
  • 2 tablespoons lemon juice
  • 1 tablespoon dried chives
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 slices Gouda cheese

Instructions

  • Preheat air fryer to 400°F.
  • In a medium bowl, stir together the tuna, chopped celery, Greek yogurt, Miracle Whip, spicy brown mustard, lemon juice, dried chives, garlic powder, salt and black pepper until completely combined.
  • Evenly scoop the tuna mixture into the cavities of the bell peppers.
  • Place the peppers in air fryer and cook for 6-8 minutes depending on the size of your peppers. Smaller ones will take about 6 minutes and larger ones 8 minutes.
  • Then top the tuna stuffed peppers with sliced Gouda cheese and fry for another 2 minutes.
  • Serve warm garnished with fresh parsley or green onion and enjoy!
